Balado Chicken is a famous Indonesian dish. This food can be found in West Sumatra, especially in the city of Padang. Balado comes from the word 'lado' which means spicy seasoning. So, Balado cuisine means spicy food. Balado is a typical Minangkabau cooking method by sauteing chilies with various spices, usually shallots and garlic. It turns out that although Balado is spicy, the main ingredient is not just chili. Other ingredients that make Balado Chicken taste stronger are cayenne pepper, garlic, and shallots. You can also add galangal, bay leaf, and lemongrass to make the balado seasoning more fragrant. Balado is a spicy red sauce mixed with chunks of red chili sauce, which can be mixed with a variety of other foods. Marinate the chicken in lime and salt, leave it for 15 minutes.
Fried the chicken with enough oil until browned, remove from heat.
