So, Balado cuisine means spicy food. Balado is a typical Minangkabau cooking method by sauteing chilies with various spices, usually shallots and garlic. It turns out that although Balado is spicy, the main ingredient is not just chili. Other ingredients that make Balado Chicken taste stronger are cayenne pepper, garlic, and shallots. You can also add galangal, bay leaf, and lemongrass to make the balado seasoning more fragrant. Balado is a spicy red sauce mixed with chunks of red chili sauce, which can be mixed with a variety of other foods. Meat or vegetables that can be made with this Balado sauce include beef, chicken, shrimp, squid, eggplant, eggs, potatoes, etc. For meat, usually, it has to be sauteed first so that the meat is cooked, then mixed with Balado sauce.
