For Eggplant with Sambal, we will be using purple eggplant. The ingredients are very simple, consisting of shallots, garlic, some red chilies, and other spices. Balado is a spicy red sauce mixed with chunks of red chili sauce, which can be mixed with a variety of other foods. Meat or vegetables that can be made with this Balado sauce include beef, chicken, shrimp, squid, eggplant, eggs, potatoes, etc. For the meat, usually, it has to be sauteed first so that the meat is cooked, then mixed with Balado sauce.   • 4 small eggplants or 2 large eggplants, cut 3-4 cm
  • 6 tbsp oil for sauteing
  • 2 tbsp tomato paste or 1 tomato
  • 8 red chilies
  • 1 garlic
  • 3 shallots
  • 1 tsp salt
  • 1 tsp sugar

Saute the eggplant in oil until it's brown, remove from heat, and put it on a plate.

Balado sauce: Mash the red chilies, garlic, shallots, tomato/tomato paste, salt, and sugar. Then cook briefly with oil until fragrant, remove from heat.
