Potato Balado

Balado is a mixture of chili and other ingredients, which make a special taste. It's originated from West Sumatra.

Ingredients
 500 g potatoes, cut into squares
 2 tbsp tamarind paste
 1 tsp galangal powder
 1 tsp salt
 2 tsp sugar
 2 bay leaves
Mashed ingredients
 6 cayenne peppers
 4 shallots
 3 garlic
Directions

Soak potato pieces in water (add 1 tsp salt) for 15 minutes.

Fry the potato pieces until brown.

Blend all the mashed ingredients, then saute with oil, add bay leaf and galangal, stir until fragrant.

Add the fried potatoes, mix well, make sure it tastes as desired.

Pour onto a plate, and the balado potatoes are ready to eat with warm rice.
