  • 500 ml of liquid coconut milk
  • 3 tbsp of tamarind water (tamarind paste mixed with water)
  • 1 lemongrass, crushed
  • 2 bay leaves
  • 2 tsp cinnamon powder (or 3-4 cm cinnamon)
  • 1 tsp nutmeg powder
  • 4 cloves

Mashed Ingredients

  • 4 large red chilies
  • 4 shallots
  • 3 garlic
  • 2 tsp turmeric powder
  • 1 tsp ginger powder
  • 1 tbsp galangal
  • 2 tsp coriander
  • 1 tsp cumin
  • 1 tsp pepper
  • 1 tsp salt

Heat the oil, add all the mashed ingredients and cinnamon, nutmeg powder, and cloves, stir until fragrant.
