Cooking over charcoal makes the chicken satay have a delicious smoked taste while keeping it juicy on the inside. The difference between chicken satay and Taichan Satay with Peanut Sauce lies in its appearance. Chicken satay is usually brown when it's grilled, but in Taichan Satay it's usually off-white. The seasoning is also different, chicken satay usually uses peanut sauce, while Taichan Satay uses spicy seasoning. The spices used to marinate the chicken are also different. Chicken satay usually uses a variety of spices, such as ginger, shallots, garlic, candlenut, galangal, etc. Meanwhile, Taichan Satay is only marinated with salt, pepper, and lime water. And of course, the tastes of chicken satay and Taichan Satay are very different, but both are still delicious! Here's an easy recipe for Taichan Satay with Peanut Sauce along with the steps to make it.
Marinate the chicken fillet with salt, pepper, lime water, and garlic powder. Leave it for 30 minutes.
Peanut Sauce: Saute (with 2 sdm oil) the raw peanuts, large red chilies, and garlic until brown, and don't burn.
After that, blend the sauteed mixtures with shallots and add 450 ml of water. Once blended, put it back in the saucepan and add 250 ml of water. Add sugar, brown sugar, salt, sweet sauce (kecap manis), and lime leaves. Stir well until it boils. You can add more sweet sauce (kecap manis) or sugar if it's not sweet enough.
Sambal: Blend the red bird's eye chilies, garlic, salt, and water. After that, saute the blended sambal, then add the shrimp paste. Cook until boiling; if it's too spicy, add sugar.
